KHAKI IN COGNAC WITH ANISE OLIVE OIL TORTAS

Khakis are very abundant in the low area of the Segura Mountains, in Spain. With this recipe you can eat your Khakis hard like an apple and however, sweet like honey.


Ingredients:

3 kg of unripe Khakis, but already with their brown colour, and an empty jar, like the ones of jams, with two glasses of cognac.


Preparation:

In a big pot we put the jar with cognac and we place the Khakis around until the pot is covered, paying attention that none of them is moistened by the liquor. We cover the pot and we let the liquor vapours work during 10 or 15 days. In case that Khakis are still hard not when tasting, we will let them inside the pot for 5 days more.

Khakis are peeled like apples, cut in slices and eaten with the Anise Tortas de Aceite.  Delicious!
