Artisan Cured Sheep Cheese
This matured sheep cheese is made in an artisanal way with raw milk from the own sheep of the cheese factory itself. It is a pressed paste cheese with 6 months of curing, natural rind brushed with olive oil and without preservatives. It has an intense but balanced flavor, resulting surprisingly juicy and with a pleasant and long aftertaste. Its smell is intense with notes of slightly toasted nuts. The paste is hard and compact, yellowish-white in color and with small, irregularly distributed eyes. Awarded with a silver medal in the World Cheese Awards 2021 edition of the World Cheese Competition.
