Artisan dense paste cheese covered with charcoal on which white and grey molds are developed. The flavour is delicate, buttery and smooth with a slight sweetness that leads to an equally light acidity with lemon notes. It is perfectly shredded in salads, tortillas or served with anchovies or olives.
