Dried salted Tuna (Mojama)
Dried salted tuna (Mojama) is, undoubtedly, one of the most recognizable products of Spanish gastronomy, even more in the Barbate area, making it one of the most delicious dishes that can be made with tuna. A unique product, with exceptional qualities. For its preparation, the loin is used, a noble piece par excellence because it is the leanest cut of the tuna. After the extraction and washing, they are salted and left to dry with the winds of the Strait of Gibraltar. The best way to enjoy it is cut into slices, neither too thin nor too thick, and adding some Extra Virgin Olive Oil on top. Free of anisakis.
