Honey & Thyme Cured Sheep Cheese
Pasteurized sheep’s milk cheese matured for 6 months and marinated in thyme and honey. When cut, it presents an ivory color with characteristic internal infiltrations of honey. Its aroma is balanced and delicate. It has a pleasant thyme flavor that attenuates the intense flavor of sheep’s milk. On the palate, it has a sweet honeyed aftertaste with slight earthy nuances. Its rind is bathed in honey and covered with natural thyme, giving it an appearance reminiscent of damp earth and forest mushrooms. Gold Medal at World Cheese Awards 2022-2023.
