Manchego cheese with Protected Designation of Origin with a high maturation. We are dealing with a cheese made from pasteurized milk of sheep from the La Mancha breed with a maturation period between 16 and 18 months. Its long maturation period gives it a strong, pervasive and piquant flavor, with a long and pleasant aftertaste. Its paste is firm, compact and pale ivory color, with a rough and flaky texture. A real gastronomic gem.
