Olavidia Cheese – World’s Best Cheese 2021
Awarded the prize for the best cheese in the world at the 33rd edition of the World Cheese Awards 2021, Olavidia, by Quesos y Besos, is a goat cheese of lactic coagulation with a buttery texture and natural moldy rind. It is a fresh cheese with yogurt aromas, as dairy cheeses usually have. It has a fruity flavor with a mild acidity. Notes of sweet cream and mushroom aftertaste with a slight point of bitterness, and spicy if eaten with the rind. In the mouth, it is creamy and melting on the palate. It has a fine layer of olive bone carbon in the center of the cheese that makes it attractive and different.
