Piece of female white pig ham, carefully elaborated and ripened for minimum 15 months. Its high infiltration of fat, produces a great flavour and juiciness. It has a nice aroma and an homogegeous, slightly fibrous texture. Its colour is purple in the lean part and shiny in the fat part.
