Artisan Sheep Cheese Cured in Wine with Flowers
Cheese made with raw sheep’s milk and ripened with natural rind. After 5 months of curing, wine is injected into it and it is macerated for a month, up to 6 months, at which time it is covered with a crust of flower petals. Its own notes of cured sheep cheeses achieve subtle reminiscences and aromas of wine. The outer rind with flower petals pursues two objectives: to provide floral aromas that complement the aromas of wine, creating a unique organoleptic sensation, and to cover it elegantly for a perfect presentation. It has a firm interior where purple veins of the injected wine stand out and a smooth and creamy texture.
