Artisan Sheep Cheese Cured in Wine
Wine-cured cheese made with raw sheep’s milk and ripened with natural rind. After 5 months of curing, wine is injected and macerated for a month, until 6 months of curing. It has a firm paste interior where the purple veins of the wine it contains stand out. Its texture is smooth and creamy, and its delicate aroma has hints of wine that harmonize perfectly with the aromas of raw sheep’s milk. Awarded Silver at the World Cheese Awards 2021-2022.
