Sheep Cheese Cured

This matured sheep’s cheese is made with pasteurized sheep’s milk from the Castilla La Mancha area. It is a pressed cheese with an approximate curing period of 4-5 months. It has a smooth and balanced flavor, being surprisingly juicy and with a pleasant and long aftertaste. Its smell is intense with notes of lightly toasted nuts. The paste is hard and compact, yellowish white in color and with small, irregularly distributed eyes.
